Keto Cream Cheese Pancakes
Ingredients
- 1 cup almond flour
- 2 eggs
- 2 ounces cream cheese , softened
- 1/4 cup milk
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon baking powder
- 1 teaspoon xylitol
- 1/2 teaspoon cinnamon
- 1 teaspoon butter , for skillet
Instructions
- In a medium bowl whisk together almond flour, eggs, cream cheese, milk, vanilla extract, baking powder, sugar and cinnamon together.
- Spoon 1/4 cup of pancake mix onto a hot oiled skillet and cook until done, flipping occasionally.
- Serve with bacon, low carb berries (like strawberries, raspberries, blueberries) and low carb syrup.

Based on comments, I added 2 tablespoons of coconut flour, increased the milk (unsweetened vanilla almond milk) by a splash, and used 1 1/2 teaspoons swerve. They were very good, fluffy and no problem flipping them.
Just finished eating a scrumptious breakfast of these pancakes! It was our first time using this recipe & added our homegrown blueberries to the batter as well as on top. Next time we will adjust milk so batter is a bit thinner so pancakes are flatter and cook through in less time. But despite darker result, they were incredible! We used fine (not ultra fine) almond flour and they were not gritty at all. And used 1T. Splenda and wouldn’t change another thing. YUMMMY.
I would like to try these but I have to stay away from dairy. Do you know an alternative that I could use in place of the cream cheese?
We have a recipe that does not use cream cheese. Keto Pancakes.
You can always use a dairy-free cream cheese alternative as well. There are some fantastic brands out there these days. Just be aware that the carb count will vary with those products.
Can you use something in place of xylitol? I have stevia and Bocha Sweet.
Looks like Bocha Sweet is a 1-1 ratio to xylitol.
I’m in the process of making these pancakes. So far, they look great. I’m loving that I can have both butter and pancakes! As they’re cooking, they smell wonderful.
They are about 1 minute into cooking and I’m so excited to see the other side.
Just turned them and they are so PRETTY! That’s hLf the battle, if they look good, it always help the taste.

You will need to spread the pancake batter a bit yourself. It’s not thin like traditional pancake batter.
