It’s a cake baked in a mug! I’m not sure where mug cakes originated from. I seriously looked it up. What I do know is that they are genius, single serving cakes from heaven. They are exactly what they say they are, cakes baked in a mug! It’s perfect for those needing a single serving and not baking the ENTIRE CAKE like with our Keto Chocolate Cake.
Tips to Making a Fantastic Keto Cake in a mug
- Be sure to use a microwavable mug.
- Scrape the sides down to ensure it has been properly mixed AND that it won’t burn on the sides.
- Your cake mug is going to rise so be sure to have ample room from the batter to the top. Then also keep an eye on your cake while it cooks up to ensure it will not spill out of the mug justtttt to be safe.
- It is going to be EXTREMELY HOT – I know you want to dig in but be very careful with removing from the microwave and also digging in immediately. Let that mug cake coooooooooool down.

Dairy-Free Options: You can swap in a dairy free alternative for the butter (or coconut oil) and also there are fantastic dairy-free cream cheese alternatives out there these days.
Pro tip: The cake will be HOT – so be sure to allow to cool before adding frosting or nabbing your first nibble.

HOW MANY NET CARBS IN OUR KETO VANILLA MUG Cake?
6 Net Carbs! I’m actually really excited about that calculation after making these ourselves because truthfully one serving was just enough for me to feel TOO full so for now on I’m splitting it in half for the next day. Which would break it down to 3 Net Carbs and that is fantastic for us when it comes to dessert!
Dollop some fresh Keto Whipped Cream or our FANTASTIC Keto Cream Cheese Frosting which if you put 1/4 cup of whipped cream on it would be just an additional .5g net carbs.

Keto Vanilla Mug Cake
Ingredients
- 1 Tablespoon cream cheese
- 1 Tablespoon butter ( or dairy-free alternative, coconut oil)
- 2 Tablespoons coconut flour
- 1 teaspoon baking powder
- 2 Tablespoon monkfruit sweetener ( or any other sweetener of your choice)
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 small pinch of salt
Instructions
- Add cream cheese and butter into mug. Microwave on high for 15-20 seconds, or until coconut oil is melted.
- With a fork whisk in coconut flour, baking powder and sugar. Add the egg, vanilla extract and salt. Mix until fully combined. You'll want to scrape the sides of the mug down to avoid those spots burning.
- Microwave on high for 1 minute and 30 seconds, or until cake has risen and toothpick comes out clean. WARNING: Will be very hot. Give a few minutes to cool down before adding your frosting and digging in.

Would love to try adding some cocoa powder to this to make it chocolate how would you go about doing this? I’m assuming more moisture would be needed? You see if I can make it chocolate I could share half and half with my husband and then eat one every day ðŸ˜

I have tried so many mug cakes, usually chocolate, but I saw this recipe and thought I would give it a go. Oh boy, I am so glad I did!! This is, by far, the best mug cake. Texture, flavor, the whole experience is better. My go to when I have a sugar craving 🙂
I haven’t tried it out and I nearly fell out of my chair when I saw the Net Carb count. So we should subtract Sugar Alcohols from Total carbs and that gives you Net carbs?? 35-24= 9 Net Carbs. I thought you subtract carbs minus fiber? That would be 35-5=30 Net carbs. Clarify please? Is there another sweetener that can reduce the Sugar Alcoa’s??

To be to the point. We subtract all sugar alcohols. So it would be 35G Carbs – 5G Fiber – 24G Sugar Alcohols = 6 Net Carbs
A Very Pleasant and unexpected surprise. Not usually a fan of coconut flour. I was tempted to use almond flour, but I stuck to the recipe and it was absolutely delish. Something I’d eat if I weren’t in low carb.

Can you use almond flour, instead of coconut flour?
You can just keep in mind that coconut flour is much more absorbent so you will need to increase the almond flour amount used.

What are the sugar-type sprinkles on top & where did you buy or how did you make, please???
There are actually quite a bit of sugar-free sprinkle options out there now! We came across some in our local grocery store just the other day!
Now for us.. a little bit of sprinkles for a holiday like a birthday is what we’d say is a ‘in moderation’ thing ourselves. But if you’d like to make them yourselves we’ve been told this Sugar-Free Sprinkle Recipe is fantastic. 🙂
Does this really have 35g of carbs? Where does the 35g of carbs come from? I don’t see where 35g comes from based on the ingredients.

Most people subtract sugar alcohols to get your carbs BUT some react to them differently than others so it’s important to us that we clearly label everything in our nutrition label.
