Ants on a log is hardly a recipe. But I’m a mom, and this time of year when I’m getting ready to send my munchkin back to school, I appreciate reminders of simple, fast snacks I can put together at the last minute, either for my son’s lunch box, or for an after school snack.
In fact, I love “recipes” where you can look at the photo and know immediately what to pick up at the grocery store without having to search for an actual ingredient list. This snack is a case in point.
Ants on a log is typically topped with raisins or dried cranberries. But those can really send your carb count through the roof. So I immediately considered low carb chocolate chips. At first, I questioned whether or not chocolate and celery could really go together. But what I discovered is that chocolate goes with anything. Even celery.
You do want to watch that you don’t overdo it on the chocolate chips or peanut butter, but as a small snack, these are perfect and quite portable. The only reason mine were runny is because I used a new, runny jar of peanut butter. Had I used chilled peanut butter and kept things cold (like you would with a cold pack in a lunch box), this wouldn’t have been quite so messy to eat. But hey… chocolate and peanut butter for a snack? I’m not complaining. More than happy to lick my fingers after that!
