I love Caesar salads. I always have. But I really try hard to get more nutrition into my diet while keeping the dairy out of it. So what’s a girl to do in this predicament?
Well, I’ll tell ya! I sub the traditional romaine lettuce with a kale mix I get at Trader Joe’s. It’s got kale, red cabbage strips and shredded broccoli in it. I simply discard the dressing it comes with. This gives me extra nutrients in my salad. Then, I created an oil-based Caesar dressing that, while obviously not an exact match to the regular, dairy-filled stuff, comes pretty darn close!
The flavors in this dressing are really similar, and you get a nice dose of healthy oils. This one is a staple in my fridge. I love it!

Ingredients
- 1 cup mayonnaise, no sugar added
- 1/4 cup oil, light flavored (I used grapeseed)
- 4 medium cloves garlic
- 1 tsp. onion powder
- 1 tsp. dried thyme
- 1 tsp. lemon juice
- 1/2 tsp. dried mustard
- 1/2 tsp. ground black pepper
- 1/4 tsp. salt
Instructions
- Place all ingredients in a blender and blend until smooth.
- Store in refrigerator for up to 2 weeks.
