So as some of you may know, I’ve been having some fun with jicama lately. In moderation, it’s perfectly acceptable on a low carb eating plan. I shop at Trader Joe’s every week and they have pre-cut jicama (no, they didn’t pay me to say that. I really do shop there). It’s convenient because it’s already cut just like fries! So I can bring home a package, season them however I like and I’ve got a nice, low carb snack to enjoy.
So this time I thought I’d try something a little sweet. Something more like dessert than a regular snack. I did have these for dessert and they were absolutely delicious! In fact, I even had a “throw-back” pang of guilt for having dessert until I remembered what I was eating was low carb.
See, you can have your dessert and eat it too on a low carb plan!
I will say that these are better out of the fridge than out of the oven. So if you have the time after baking, set them in the fridge for a few hours until they are completely chilled. Then serve. They would be yummy served with a sweetened sour cream or cream cheese dip! I’ll have to come up with that recipe in the future though because the fries you see in the photos above are already totally gone. Yep, they were yummy!!

Ingredients
- 9.5 oz. sliced (fry-cut) jicama
- 1/4 cup erythritol
- 2 tsp. ground cinnamon
- 1/4 cup oil
Instructions
- In a food-safe plastic bag (about 1 gallon size), combine all the ingredients and shake to coat the fries.
- Pour out onto a cookie sheet.
- Bake at 400 for approximately 15-20 minutes, or until they have a nice, golden brown color.
- Remove from oven, cool and serve.
