Summer is here and we for one love to enjoy something cold and sweet on hot days from time to time. These Keto Popsicles hit the spot.
It’s admittedly a little harder since I gave up dairy, but not impossible. I love coffee ice cream, so I thought I would try my hand at making low carb coffee popsicles.
These turned out super yummy! But my favorite part is, when you get to the end of eating your popsicle, the bottom portion is where the cocoa butter settled. Cocoa Butter reminds me of white chocolate.
So it’s like you are biting into cool, sweet chocolate! (No complaints here!) It’s the perfect ending to a perfect keto treat!

If you’d like to use another form of sugar substitute be sure to check out our low carb sweetener conversion chart. We used stevia for this recipe but as that sweetener really is off-putting to some you are more then welcome to use another sweetener.
Just be aware that stevia has 0 sugar alcohols so if you use another type of sweetener to be aware of sugar alcohols as it can block some weight loss goals or sugar spikes in some. Just be aware. 🙂
And just so nobody wonders, the lines on the popsicles in the photos are only there because of the design on my popsicle molds. If your molds are smooth, you won’t have those. But they are kinda pretty!

Keto Coffee Popsicles Recipe
Ingredients
- 1 1/4 cup brewed coffee
- 1 tsp. pure vanilla extract
- 4 tbsp. food-grade cocoa butter
- stevia to taste (or any low carb sweetener you prefer)
Instructions
- Blend everything together in a blender.
- Pour into Popsicle molds and freeze overnight.
