It’s been a while since I’ve enjoyed a plate of hearty shepherd’s pie. Truth be told, it’s not the first thing I think of when I consider what I’ll be making for dinner. It just doesn’t jump to mind.
But now that I have this low carb version that may be changing. I even managed to enjoy this with dairy without having too bad of a reaction. This was truly a hearty, filling and comforting dinner for both my little guy and myself.
In fact, my son actually asked when we were having this again. So I guess you could say this is kid-approved, and yes, that makes mom pretty darn happy.
Note that there is one very important trick to making this turn out well. You’ll find that at the link below. Make this ahead of time and freeze for a busy weeknight, or make it all at once. Either way, it’s pretty simple to put together and the finished product freezes well too!
