Ingredients

  • 2 bags fresh or frozen cauli-rice
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 1 tbsp. ground cumin
  • 1 tbsp. paprika
  • salt and pepper to taste
  • 3/4 cup fresh tomatoes , chopped
  • 1 medium avocado , chopped
  • 1/4 cup fresh cilantro , chopped

Instructions

  • Cook the cauli-rice to package directions and to your liking.
  • Transfer to a casserole dish or bowl.
  • Stir in the spices and let everything sit until it's cooled a bit. (Add salt and pepper to taste here if you wish)
  • Top with your fresh cilantro, tomatoes and avocado. Serve.
