Low Carb Mexican Chorizo Scramble Recipe

Ingredients
  • 2-4 tbsp. oil
  • 1/3 cup chopped, green bell pepper
  • 1 (3 oz.) pre-cooked Mexican Chorizo sausage, sliced (about half a large sausage)
  • 2 large eggs
  • fresh, chopped cilantro for garnish (optional)
Instructions
  1. Warm the oil in a medium skillet.

  2. Saute the bell peppers and sausage (and jalapeno if using) together for about 2 minutes.

  3. Break the eggs into the pan and scramble.

  4. Top with a sprinkle of fresh cilantro and serve.
