Low Carb Bacon Avocado Soup Recipe
Yield: 5 cups, approximately
Ingredients
  • 4 cups chicken stock or broth
  • 1/3 cup loosely packed, fresh chopped cilantro
  • 1 tsp. garlic powder
  • 2 medium avocados, pitted
  • 1/2 medium lime, juiced
  • 1/2 lb. bacon, cooked and broken into small pieces
  • salt and pepper to taste
Instructions
  1. In a medium to large pot, bring the chicken stock to a low boil. (If serving warm)

  2. Place the cilantro, garlic powder, avocados and lime juice in a blender.

  3. To the blender, add 1 cup of the chicken stock (warm or cold).

  4. Blend until smooth, then stir it into the rest of the stock.

  5. Add the bacon.

  6. Season with salt and pepper to taste and serve.
