Low Carb Spinach, Strawberry, Bacon and Artichoke Heart Salad Recipe
Yield: 4 servings
Ingredients
  • 3 oz. washed spinach leaves (I used half a 6 oz. package of pre-washed baby spinach)
  • 1/4 (14.5 oz.) jar artichoke hearts + 1/2 the oil they are packed in
  • 1/2 lb. bacon, cooked and broken into small pieces
  • 1 tbsp. white balsamic vinegar
  • 4 large fresh strawberries, sliced
  • salt and pepper to taste
Instructions
  1. In a large mixing bowl, toss all ingredients together and serve.
