Ingredients
  • 1/4 cup oil
  • 1 lb. chicken breasts (frozen, boneless, skinless)
  • 1 (12 oz.) package riced cauliflower (frozen is best, but not required)
  • 1 cup low carb barbecue sauce
  • 3 tbsp. dry ranch mix (see recipe link)
  • 3 medium tomatoes , chopped
  • 1 1/2 cup shredded monterey jack cheese
  • fresh parsley for garnish
Instructions
  1. Preheat oven to 375 F.

  2. Pour the oil into your casserole dish. It must be large enough to allow the chicken to be laid down in a single layer.

  3. Add the chicken, top with the cauliflower, ranch mix, roma tomatoes and finally top with the barbecue sauce.

  4. Bake for 25 minutes or until the chicken reaches at least 165 F. on a meat thermometer. Top with shredded cheese and pop back into the oven for another 5-10 minutes, or until cheese is melted.

  5. Cool slightly and serve immediately.
