Ingredients

  • 1/4 cup oil
  • 1 lb. chicken breasts (frozen, boneless, skinless)
  • 1 (12 oz.) package riced cauliflower (frozen is best, but not required)
  • 1 cup low carb barbecue sauce
  • 3 tbsp. dry ranch mix (see recipe link)
  • 3 medium tomatoes , chopped
  • 1 1/2 cup shredded monterey jack cheese
  • fresh parsley for garnish

Instructions

  • Preheat oven to 375 F.
  • Pour the oil into your casserole dish. It must be large enough to allow the chicken to be laid down in a single layer.
  • Add the chicken, top with the cauliflower, ranch mix, roma tomatoes and finally top with the barbecue sauce.
  • Bake for 25 minutes or until the chicken reaches at least 165 F. on a meat thermometer. Top with shredded cheese and pop back into the oven for another 5-10 minutes, or until cheese is melted.
  • Cool slightly and serve immediately.
