Low Carb Buffalo Chicken Meatballs

Ingredients

  • 1 pound ground chicken
  • 1 whole egg
  • 1/4 cup onion finely diced
  • 3 Tablespoons almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 cups low carb buffalo sauce
  • 1/2 cup white vinegar
  • 1 Tablespoons smoked paprika

Instructions

  • Mix together ground chicken, egg, onion, almond flour, onion, garlic powder and onion powder. Mix ingredients together until well combined. Place in the fridge 15-20 minutes.
  • Preheat oven to 400 degrees F. Prepare baking sheet with parchment paper.
  • Create inch sized meatballs and place on the parchment covered baking sheets. Making apprx 24 meatballs.
  • Place in oven for 5-6 minutes, or until edges are browned.
  • Transfer meatballs to a slow cooker and cover with buffalo sauce, vinegar and paprika. Set slow cooker on low for 2 hours.
  • Dip into your favorite low carb ranch dressing.
