  1. Preheat oven to 350 degrees F. Prepare a baking sheet with parchment paper.

  2. Beat softened butter with erythritol for 1 minute. Add vanilla extract and egg. Beat together for another 30 seconds until combined.

  3. Add the baking powder, sea salt, and coconut flour. Mix until it is well combined. Fold in chocolate chips. Allow the dough to set 5 minutes.

  4. With your hands press the dough together until it forms a ball. You want it to hold together. If it doesn't add 1 Tablespoon of light oil or melted butter and that should solve it. 

  5. Roll the dough into 12 balls and place onto prepared baking sheet. Bake 10-12 minutes.

  6. Let them fully cool before removing from the baking sheet. Store in an airtight container up to 5 days.
