Low Carb Macadamia Nut Crusted Chicken
Yield: 4 servings
  1. In a bowl, whisk together the eggs and coconut milk.

  2. In a food processor, blend the garlic powder, nuts and psyllium husks together until you have a soft, bready consistency. It'll be a bit wet and sticky to the touch. You'll notice it start to "ball up" a bit in the processor. That's when it's done.

  3. Dip the chicken in the egg mixture and place on a parchment-lined baking pan.

  4. Using your fingers, spread the nut mixture over the entire top side of the chicken breast. Continue until all pieces of chicken are on the pan and coated.

  5. Bake at 350 F. for approximately 40-50 minutes. This will vary greatly by oven, so start keeping an eye on it around the 30 minute mark.

  6. When the chicken reaches at least 165 F. on a meat thermometer, it's done.

  7. Cool slightly and serve.
