My main blog, The Gracious Pantry, was and continues to be a record of the things I cook every day. However, recent blood sugar issues made me aware of my need for low carb eating.
As I learned and implemented more and more low carb eating, I realized that I feel so much better when I eat low carb! My body functions better and my blood sugar is manageable with diet and very little medication.
As a clean eater, I’ve noticed that there are many low carb recipes out there that involved a box of something as an ingredient. There are so many FAKE low carb foods out there. I mean, they are low in carbs, but the ingredients often leave me scratching my head. I may not want carbs, but that doesn’t mean I want to replace them with chemicals and garbage! So I started applying low carb eating to my usual clean eating ways, and so far, I’ve been getting better and better at it.
My family does not eat low carb, and I’m okay with that. I love to cook, so cooking a separate meal for myself isn’t really an issue. Plus, it allows me to continue making recipes for my other blog while sharing low carb recipes with you here.
I had blood work done before I started eating this way (mid February, 2016), and once again just a short while ago (mid July, 2016).
Before I started eating low carb, high fat (LCHF), and despite eating clean, I had a fatty liver, stage 1 kidney failure and an A1C of 6.5. In recent testing, I’m down to 5.0 on my A1C, my fasting sugars are under 100 again and often in the high 80’s. 40 lbs. just dropped off without any effort whatsoever and all my cravings are gone. I actually have control over what I put in my mouth again and boy does that feel good! My liver is fine and my kidney function is totally back within normal ranges.
NOTE: The liver and kidney issues were related to my higher blood sugars and all the problems that that creates. Most medical professionals will tell you to avoid this way of eating if you have kidney problems. I can’t advise you on that one way or the other. Please speak with a medical professional you trust about that. I have no medical training and cannot make any recommendations of that nature. I am simply sharing what has worked for me.

The two sweeteners I use here are organic, pure, liquid stevia as well as non-GMO Erythritol. If you follow me on The Gracious Pantry, you may look at the use of Erythritol a little cross eyed. It’s definitely not a clean eating ingredient. But as with most eating plans, you have to make exceptions for your own personal life. And since I do not eat a lot of sweets anyway these days, I allow the Erythritol in my diet for special occasions and such. I have found it to be the best option for me. If you use a different sweetener, awesome! This is just what works for me. You certainly do not have to do what I’m doing. Do what works best for you!

And just an FYI, these recipes tend to lean more towards a Ketogenic diet, but can easily be adjusted to just about any type of low carb eating you follow.
