When you’re in a hurry, there’s nothing like a quick salad that you can throw together for lunch. This one is fast an easy and best of all, requires no cooking!
And let’s face it, it’s important to keep low carb food interesting with different recipes each week. So add this to your lunch time rotation to keep your low carb meals appealing and tasty!
The protein will keep you full until dinner and you can always enjoy this over a bed of lettuce with some avocado for dinner.
Just remember to pack it with an ice pack when you put it in your lunch box. You don’t want this getting warm between breakfast and lunch. It’s important to keep fish cold!

Ingredients
- 2 cans water packed tuna
- 1 stalk celery
- 1/4 small red onion
- 1/2 medium cucumber, peeled
- 1/3 cup mayo, no sugar added
- 1/2 lime, juiced
- salt & pepper to taste
Instructions
- In a medium mixing bowl, combine all ingredients and stir to combine.
- Eat this as a stand alone dish, or serve with a side salad.
