One of the hardest parts for me about eating low carb and dairy free is that so many low carb recipes out there call for dairy. A low carb or keto eating plan is typically riddled with dairy. It seems to be a mainstay with this type of eating plan. And for good reason, it’s a great way to get extra fats. But for those of us who can’t handle dairy, this presents a whole new problem. How to not get bored eating the same thing over and over again because you are so darn limited on what you can eat and drink.
So I’ve taken a cue from the Paleo world and started implementing more coconut. In this case, coconut milk.
Now if increasing your fat intake is not at the forefront of your health goals, you can use light coconut milk instead. That will dramatically reduce the fat content while still being low in carbs.
This recipe came about out of a desperate need for a creamy, soothing drink on a foggy evening. Sometimes, you just need a comforting treat, and this fit the bill perfectly. All those wonderful autumn flavors and none of the dairy to upset my poor, sensitive tummy.
YOU MIGHT ALSO ENJOY THESE LOW CARB RECIPES:
- 1/2 cup full-fat coconut milk
- 1/4 tsp. pumpkin pie spice, no sugar added
- 1 tsp. pure vanilla extract
- low carb sweetener of choice to taste
In a small pot, combine all ingredients.
Over low to medium heat, warm the milk while whisking.
When the milk has small bubbles (when it simmers), it's done.
Serve in a nice little mug and enjoy!
