Ice Cream will always be one of my favorite ways to enjoy the summer.. well really anytime of the year. I love ice cream so much.
We’ve been scooping our way through summer with this this ice cream maker (aff link). One of my favorite flavors is Chocolate ice cream (although coffee ice cream ranks #1). I mean we do absolutely love chocolate. This Keto Flourless Chocolate Cake wouldn’t tell you otherwise.
We had this in the ice cream maker in about 5 minutes and had ready-to-eat ice cream about 30 minutes after that. It was pretty awesome actually. I love the idea of being able to make any flavor I want and add any additions I like.
What mix-ins to add to this Chocolate Ice Cream
- Chocolate chunk ice cream, you can either order a bag of low carb chocolate chips (aff link), or you can make a batch of my homemade, low carb chocolate bars and break those into chunks.
- Walnuts are also a fabulous addition too!
- Cookie Dough is another way to my heart. Cookie dough AND chocolate?! Hecks yeah.

HOW MANY NET CARBS for our Keto Ice Cream
1 Net Carb per serving. One serving is 1/4th of what this recipe makes. So quite a bit honestly. So split the ice cream into 4 even servings and that is it!

There are 48 grams of sugar alcohol in the entire recipe and should be subtracted to get your net carbs. So 12g of sugar alcohol per serving should be subtracted to get the 1 Net Carb.

Our family does subtract the sugar alcohols and we’ll continue to provide that sugar alcohol grams above the nutrition card below and you can decide for yourself if you want to follow that. ?

Perfect sweetness to our chocolate ice cream
This is not overly sweet. If you prefer sweeter things I’d adviseIf you prefer sweeter sherbet, try adjust with more sweetener to taste while the ice cream is still churning in the ice cream maker.
NOTE: you must add the additional sweetener in before the ice cream becomes completely frozen. So keep an eye on things if you wish to adjust the sweetness to your liking.
Using Pasteurized Eggs
Since you are using raw yolks using pasteurized eggs is always your safest option. You can either purchase them, or pasteurize them at home yourself.

Low Carb Chocolate Ice Cream Recipe
Ingredients
- 4 large egg yolks (pasteurized eggs are safest)
- 1/4 cup powdered monkfruit
- 2 cups unsweetened chocolate almond milk
- 1/2 cup MCT oil
- 2 tsp. pure vanilla extract
- 1 tbsp. unsweetened cocoa powder
- 10 drops pure liquid stevia
- 1/8 tsp. sea salt
Instructions
- Place all ingredients in a blender and blend for 1 to 2 minutes.
- Place the mix in your ice cream maker and process according to the machine's directions.
- Scoop and enjoy!

What other type of low carb milk would you recommend instead of almond milk. I am terribly allergic to almonds. This is a struggle for me with low carb recipes!
Can you do coconut milk? That is a fabulous dairy-free alternative that can almost always be used in replacement unless we note otherwise.. Or you can always use heavy cream if you are not needing to be dairy-free.
