A while back my family was looking for a quick snack to make while preparing dinner. We were making our Keto Chicken Parmesan and wanted something healthy to snack on. These Keto Caprese Salads hit the spot.
All you need are a few simple ingredients and in under 10 minutes they are made!

I never was a huge fan of raw tomatoes growing up. Still from this day I can’t eat a ton of them as it upsets my stomach.
BUT when I found out the beautiful wonders of adding salt onto raw tomatoes I would indulge in that treat every once in a while. SO – if you’d like to try and sprinkle a bit of salt onto these caprese salads – GO FOR IT. 😉
These are perfect to whip together when having friends and family over.

Keto Carpese Salad
- 3 whole roma tomatoes , each sliced into 3 slices for thick bites.
- 1 ball mozzarella , sliced into 8 slices
- 8 leaves fresh basil
- 1 Tablespoon balsamic vinegar , or more to taste
- Layer the ingredients starting with tomato, mozzarella, basil and drizzle with balsamic vinegar
- Serve immediately.
